Espresso

  • Espresso
    About 30 ml of coffee pushed through fine grounds under pressure.
  • Ristretto
    A "restricted" shot: the same grounds, stopped early.
  • Lungo
    A "long" shot: more water through the same grounds.
  • Doppio
    A double espresso from a double basket.
  • Long black
    Hot water first, then a double shot on top, so the crema survives.
  • Americano
    Espresso first, topped up with plenty of hot water.
  • White americano
    An americano with a splash of milk, hot or cold.
  • Café bombón
    From Valencia: condensed milk in the bottom of a small glass and an espresso poured gently over it, so it sits in two layers, white under black, until it is stirred.

Filter

  • Pour over
    Hot water poured by hand over a bed of grounds in a paper filter.
  • Red eye
    A mug of filter coffee with a shot of espresso in it, for the morning after a long night.
  • Café au lait
    French for "coffee with milk": brewed filter coffee and hot milk, often half and half.
  • Iced pour over
    Japanese-style iced coffee: filter coffee chilled over ice the moment it is brewed, so it keeps its bright flavour.

Affogato & cream

  • Vanilla ice cream
    A scoop or two of vanilla ice cream in a cup, served with a spoon.
  • Affogato
    Italian for "drowned": a scoop of vanilla ice cream with a hot shot of espresso poured over it, eaten with a spoon while the two melt together.
  • Matcha affogato
    The Japanese café take on an affogato: freshly whisked matcha poured over vanilla ice cream in place of the espresso.
  • Cold brew float
    Cold brew over ice with a scoop of vanilla ice cream floated on top, like a root beer float.
  • Espresso con panna
    "With cream": a shot of espresso capped with a spoonful of whipped cream, the way Italian bars have served it for a century.
  • Einspänner
    Vienna's coffee of the coachmen: strong black coffee under a thick cap of whipped cream, sipped through the cream without stirring.
  • Iced einspänner
    An iced americano under a thick lid of whipped cream, a favourite in Korean cafés: the cold coffee comes up through the cream with every sip.

Milk coffee

  • Macchiato
    "Stained" espresso: a shot with a spoonful of foam.
  • Piccolo
    A single ristretto topped with silky milk in a small glass.
  • Cortado
    Spanish for "cut": a double shot cut with about the same amount of warm milk and almost no foam.
  • Flat white
    Less milk and a thinner layer of foam than a latte.
  • Latte
    The milkiest of the three: lots of steamed milk and about a centimetre of foam, often served in a glass.
  • Cappuccino
    A thick cap of airy foam over less liquid milk.
  • Magic
    A Melbourne favourite: a double ristretto with silky milk in a small cup.
  • Vanilla latte
    With a pump of vanilla syrup. The milkiest of the three: lots of steamed milk and about a centimetre of foam, often served in a glass.
  • Caramel latte
    With a pump of caramel syrup. The milkiest of the three: lots of steamed milk and about a centimetre of foam, often served in a glass.
  • Hazelnut latte
    With a pump of hazelnut syrup. The milkiest of the three: lots of steamed milk and about a centimetre of foam, often served in a glass.
  • Vanilla flat white
    With a pump of vanilla syrup. Less milk and a thinner layer of foam than a latte.
  • Caramel flat white
    With a pump of caramel syrup. Less milk and a thinner layer of foam than a latte.
  • Mocha
    A latte with a pump of chocolate sauce added before the milk goes in.
  • Caramel macchiato
    Vanilla syrup and milk first, then the shot poured through on top — the reverse of most milk drinks.
  • Long macchiato
    A double shot marked with a spoonful of foam.
  • Latte macchiato
    "Stained milk": steamed milk first, then the shot poured slowly through the foam so it settles in layers.
  • Marocchino
    An Italian café drink: a shot of espresso, chocolate and a cap of milk foam in a small glass.
  • Spanish latte
    A latte sweetened with condensed milk instead of sugar or syrup: the condensed milk in the bottom, the shot, then steamed milk.

Iced

  • Iced latte
    Ice, a shot and plenty of milk in a tall glass.
  • Iced cortado
    A strong double shot cut with about the same amount of milk and poured over ice.
  • Iced americano
    A shot stretched with water over plenty of ice.
  • Cold brew
    Coarse grounds steeped in cold water for a good long while, then poured straight over ice.
  • Iced mocha
    A mocha over ice instead of steamed: espresso, chocolate sauce and cold milk, poured cool.
  • Vanilla cold brew
    With a pump of vanilla syrup. Coarse grounds steeped in cold water for a good long while, then poured straight over ice.
  • Caramel cold brew
    With a pump of caramel syrup. Coarse grounds steeped in cold water for a good long while, then poured straight over ice.
  • Iced vanilla latte
    With a pump of vanilla syrup. Ice, a shot and plenty of milk in a tall glass.
  • Iced caramel latte
    With a pump of caramel syrup. Ice, a shot and plenty of milk in a tall glass.
  • Iced hazelnut latte
    With a pump of hazelnut syrup. Ice, a shot and plenty of milk in a tall glass.
  • Iced strawberry latte
    An iced latte over a pump of strawberry syrup: pink at the foot of the glass, coffee on top.
  • Iced caramel macchiato
    Vanilla syrup, cold milk and ice, with the shot poured over the top last so it sinks through in ribbons.
  • Mocha cold brew
    Cold brew over ice with a pump of chocolate sauce stirred through.
  • Iced espresso
    A shot of espresso poured straight over ice.
  • Cold brew latte
    Cold brew concentrate and cold milk over ice.
  • Iced Spanish latte
    Condensed milk, ice, cold milk and a shot.
  • Vietnamese iced coffee
    Cà phê sữa đá: strong coffee dripped from a little metal phin onto condensed milk, stirred, and poured over ice.
  • Coconut latte
    Cold coconut milk over ice with a shot poured over the top.
  • Coconut cold brew
    Cold brew concentrate and coconut milk over ice.

Matcha

  • Usucha
    Thin matcha: whisked powder and hot water, nothing else.
  • Matcha latte
    Steamed milk with whisked matcha poured over the top — the same milk the espresso machine makes, just under a different drink.
  • Vanilla matcha latte
    With a pump of vanilla syrup. Steamed milk with whisked matcha poured over the top — the same milk the espresso machine makes, just under a different drink.
  • Chocolate matcha latte
    With a pump of chocolate syrup. Steamed milk with whisked matcha poured over the top — the same milk the espresso machine makes, just under a different drink.
  • Iced vanilla matcha latte
    With a pump of vanilla syrup. Whisked matcha poured over cold milk and ice.
  • Strawberry matcha latte
    Strawberry syrup, cold milk and ice, with whisked matcha poured over the top: pink, white and green in three layers until it is stirred.
  • Iced matcha latte
    Whisked matcha poured over cold milk and ice.
  • Dirty matcha
    A matcha latte with a shot of espresso poured over the top.
  • Iced dirty matcha
    Cold milk, ice, a layer of matcha and an espresso shot poured over the top.
  • Iced matcha
    Matcha whisked with a little hot water, then poured over ice and cold water.
  • Coconut matcha latte
    Whisked matcha poured over coconut milk and ice.

Tonic & juice

  • Espresso tonic
    Tonic over ice with a shot poured gently on top, so the coffee floats in a brown cap over the bubbles.
  • Matcha tonic
    Whisked matcha floated over tonic and ice: a green layer on a clear, fizzing one.
  • Cold brew tonic
    Cold brew concentrate over tonic and ice.
  • Orange americano
    Orange juice over ice with a shot poured on top, and sometimes a splash of cold water.

Cocoa & milk

  • Hot chocolate
    Chocolate sauce and steamed milk.
  • Iced chocolate
    Chocolate sauce, cold milk and ice.
  • Babyccino
    A small cup of frothed milk with a little chocolate, so a child can order "a coffee" too.
  • Vanilla steamer
    Steamed milk with a pump of vanilla syrup and no coffee in it.
  • Caramel steamer
    Steamed milk with a pump of caramel syrup and no coffee in it.
  • Hazelnut steamer
    Steamed milk with a pump of hazelnut syrup and no coffee in it.
  • Strawberry milk
    Strawberry syrup, cold milk and ice, and no coffee.
  • Viennese hot chocolate
    A hot chocolate the way Vienna serves it: chocolate and steamed milk under a crown of whipped cream.

Chai

  • Chai latte
    Chai concentrate — black tea brewed strong with ginger, cinnamon, cardamom and clove, and sweetened — topped with steamed milk, about half and half.
  • Iced chai latte
    Chai concentrate and cold milk over ice.
  • Dirty chai
    A chai latte with a shot of espresso in it — "dirty", as a café says of any drink with coffee added to one that had none.
  • Iced dirty chai
    Chai concentrate, cold milk, ice and a shot of espresso.

Plant milk

Shaken

  • Espresso martini
    A fresh espresso, vodka and coffee liqueur, shaken hard over ice and strained into a chilled martini glass.
  • Shakerato
    Espresso shaken hard over ice, with a little syrup if you like, and strained into a glass: an Italian summer coffee, cold all the way through, with a pale, foamy top.
