The Japanese café take on an affogato: freshly whisked matcha poured over vanilla ice cream in place of the espresso. Bitter, grassy and sweet at once.
What makes it this drink and not its neighbour on the menu. The café in Brewology judges every one by these.
Ice cream 40–130 ml
Matcha 30–100 ml
Water 65 °C or more
Froth 2 mm or more
IceCream goes in before the matcha
